Salsa Verde

This is a versatile salsa verde and works great as a sauce to add to a variety of dishes, or as a salad dressing, or taste great as a dipping salsa for chips, or as a condiment on sandwiches, or just about any other use you can think of.

Ingredients

  • 1 lb Tomatillos
  • 1 ear Corn
  • ½ White Onion
  • 1 Jalapeño
  • 2 cloves Garlic
  • ¼ c Cilantro
  • 1 Lime
  • 2 c Water
  • ½ tsp Cumin
  • tsp Salt

Instructions

  • Husk and quarter the tomatillos. Place in a medium size sauce pan.
  • Cut corn off the cob and add to pan.
  • Roughly chop the onion, jalapeño, garlic, and cilantro and add to pan.
  • Juice the lime and add to the pan along with water and spices.
  • Bring to a boil, then reduce heat, and simmer for 15 minutes.
  • Allow to cool slightly, then blend to desired thickness.
  • Allow to cool for at least 3-4 hours.
  • Refrigerate.
