This Chocolate Guinness Cake is mostly pulled from Allison Lehman’ Blog, with modifications largely to the execution.  It is an extremely versatile moist cake that can be used for cakes or cupcakes.

Ingredients

  • 2 c Guinness Extra Stout
  • 1 ¼ c Butter
  • ¾ c Cocoa Powder
  • 4 c Sugar
  • ¾ c Sour Cream
  • 4 Eggs
  • 2 tbsp Vanilla
  • 4 c Flour
  • 5 tsp Baking Soda
  • 2 tsp Cinnamon
  • 1 ½ tbsp Molasses

Instructions

  • Preheat oven to 350 degrees
  • Add Guinness and butter to a saucepan and place over medium-low heat until the butter melts. Remove from heat. Add cocoa, sugar, cinnamon, and molasses. Whisk to combine.
  • Combine flour and baking soda in a large bowl, whisk to combine.
  • Add sour cream, eggs, and vanilla to a mixer, and mix well. Add the Guinness mixture and continue mixing.
  • Add the flour mixture a little at a time and mix well.
  • Butter 3 cake pans and line with parchment OR add cupcake liners to a cupcake pan.
  • Evenly distribute the batter to the cake pans OR cupcake liners.
  • Bake until risen. Be careful not to over bake. Around 15-25 mins.

Notes

  • This cake is very versatile and works well with many frostings and fillings, pictured is a chocolate butter cream frosting
  • This recipe can easily be cut down in ¼ increments
