This is a versatile salsa verde and works great as a sauce to add to a variety of dishes, or as a salad dressing, or taste great as a dipping salsa for chips, or as a condiment on sandwiches, or just about any other use you can think of.
Salsa Verde
Ingredients
- 1 lb Tomatillos
- 1 ear Corn
- ½ White Onion
- 1 Jalapeño
- 2 cloves Garlic
- ¼ c Cilantro
- 1 Lime
- 2 c Water
- ½ tsp Cumin
- 1½ tsp Salt
Instructions
- Husk and quarter the tomatillos. Place in a medium size sauce pan.
- Cut corn off the cob and add to pan.
- Roughly chop the onion, jalapeño, garlic, and cilantro and add to pan.
- Juice the lime and add to the pan along with water and spices.
- Bring to a boil, then reduce heat, and simmer for 15 minutes.
- Allow to cool slightly, then blend to desired thickness.
- Allow to cool for at least 3-4 hours.
- Refrigerate.
