Bourbon Ginger Molasses Cookies

Ingredients

  • 2 ¾ c Flour
  • 1 tsp Baking Soda
  • 2 tsp Ground Ginger
  • 1 tsp Cinnamon
  • ¼ tsp Ground Cloves
  • ¼ tsp Nutmeg
  • ¼ tsp All Spice
  • ¼ tsp Salt
  • 1 pinch Pepper
  • ¾ c Unsalted Butter
  • 1 c Brown Sugar
  • 1 Egg
  • 2 tsp Vanilla
  • c Molasses
  • ¼ tsp Orange Zest
  • 1 ½ tbsp Bourbon
  • c Sugar

Instructions

  • In a large bowl whisk together flour, baking soda, and spices.
  • In a mixer cream the butter and brown sugar. Add the egg, vanilla, molasses, orange zest, and bourbon and continue mixing until combined.
  • Slowly add the dry ingredients to the mixer about a ¼ at a time until incorporated.
  • Cover the dough and refrigerate for about 30 minutes.
  • Preheat oven to 350°
  • Add the sugar to a small plate or bowl.
  • Take about 1-2 tablespoons of the dough, roll into a ball, then roll in the sugar to coat. Continue to create the sugar coated dough balls and place on a cookie sheet about 2 in apart.
  • Bake for 8-10 minutes.
  • Let cookies cool for a few minutes before moving to a cooling rack.

Notes

  • The formed sugar coated balls can be frozen, when ready to eat they can be baked from frozen, just increase the cook time to 13-15 minutes.
