In a heated skillet, melt butter or margarine. Add the bread pieces. Sautee until fully incorporated into bread pieces.
Add olive oil a little at a time while continuing to mix with the bread. Continue to add more olive oil a little bit at a time to ensure bread is frying and not toasting.
Continue sauteeing the bread cubes until lightly browned. Be sure to continuously stir and turn cubes so that they do not burn.
