Overstuffed Chop Chicken Salad Sandwich

Ingredients

  • ¾ lb Sliced Chicken Deli Meat your favorite flavor
  • ½ lb Sliced Deli Cheese you favorite
  • 2 leaves Romaine Lettuce
  • 2 Tomatoes small
  • 2 tbsp Mayonnaise
  • Salt & Pepper to taste
  • 2 Soft Rolls

Instructions

  • Add a few slices of chicken to a large cutting board. You will want to overlap/layer them partially folded, do not lay them flat on the board.
  • Spoon the mayonnaise on top of the chicken. Add salt and pepper to the mayo to taste.
  • Slice the tomato and add to top of mayo along with the lettuce.
  • Layer the cheese and then the remaining chicken.
  • Using two large knives, chop the chicken until all ingredients are mixed and finely chopped.
  • Divide and scoop the mixture onto the rolls.

Notes

  • Use your favorite deli chicken and cheese, there are many combinations and we like to mix it up. A classic combination is buffalo chicken and sharp cheddar.
  • When chopping the chicken you may want to start slowly, no need to chop all the way through at first, it can be messy if trying to go too fast.
  • You can also add other toppings to the mixture as you see fit, we sometimes like to use pickled peppers to add a little heat depending on the type of chicken and cheese we use.
  • Any type of roll will work, however, a softer larger roll is recommended so that the filling does not completely squeeze out.
  • This does make overstuffed sandwiches and not all of the filling will fit in the roll, we like to scoop up any that has fallen out with chips.
