This bbq chicken is one we created after looking at a bunch of different recipes. The rub is key to this recipe and it is one we put together from a few we found. This works great as a semi-quick weekday meal.
BBQ Chicken
Ingredients
- 2 tbsp Cinnamon
- 2 tsp Ground Allspice
- 2 tsp Salt
- 1 ½ tsp Nutmeg ground
- 2 Chicken Breast
- ¾ c Ketchup
- ½ c White Vinegar
- ½ c Molasses
- ¼ c Brown Sugar
- 1 Orange juiced
- 3 tbsp Worcestershire Sauce
- 2 tsp Ginger
- 3 cloves Garlic
- 1 Green Onion
- ½ bunch Cilantro
- ¼ Habanero from bottom not stem side
Instructions
- Preheat the oven to 400 degrees.
- In a small bowl combine the cinnamon, allspice, nutmeg and salt.
- Rub the cinnamon mixture on the chicken to coat all sides. Set aside.
- Add ketchup, vinegar, molasses, brown sugar, orange juice, worcestershire sauce, and ginger to a bowl.
- Mince the garlic and add to the mixture.
- Chop the green onion and cilantro and add to the bowl.
- Dice the habanero. Start by adding a little and add more depending on how much heat you like.
- Mix the sauce to combine and set aside.
- In a dutch oven sear all sides of the chicken, then pour the BBQ sauce over the chicken.
- Place the dutch oven in the oven and bake for 20-30 minutes until chicken is cooked through.
- Allow the chicken to cool for a few minutes and then shred with a fork and add back into the sauce. Stir to coat the chicken with the sauce.
Notes
- Adjust the heat by adding more habanero, the more you add from the stem side the hotter it will be. If you prefer no heat feel free to leave it out all together.
- This works great as a sandwich or on its own with a side of coleslaw
