This beau monde salad is basically a glorified pasta salad that we created. It is named after the seasoning of the same name. It works great as a meal or as a side dish.
Beau Monde Salad
Ingredients
- 1 lb Pasta medium shells or fusilli
- 4 strips Bacon
- 2 c Rotisserie Chicken
- 1 Broccoli Floret
- ½ pint Cherry Tomatoes
- ½ Cucumber
- 1 Avocado
- ½ c Red Onion
- handful Basil
- 2 oz Canned Sliced Black Olives
- 4.5 oz Canned Sliced Mushrooms
- 4 oz Jarred Artichoke Hearts
- ½ block Feta plus more for topping
- ½ Lemon
- ⅔ c Italian Dressing
- 1 tbsp Beau Monde Seasoning
- Red Pepper Flakes
Instructions
- Cook the pasta according to package instructions. Once cooled add to a large bowl.
- Fry the bacon so that is nice and crisp. Crumble the bacon into the bowl.
- Chop the chicken into bit sized pieces and add to the bowl.
- Chop the broccoli, cucumber and avocado and add to the bowl.
- Halve the cherry tomatoes and add to the bowl.
- Mince the onion and julienne the basil and add to the mixture.
- Add the olives, mushrooms and artichoke. If the artichokes are large chop them into bit sized pieces.
- Crumble the feta into the bowl.
- Juice the half lemon and add to the mixture.
- Add the Italian dressing and beau monde seasoning and stir to combine being careful not to break down the feta.
- Refrigerate for at least an hour to let the flavors meld.
- Remove from refrigerator and add more italian dressing if the salad seems dry.
- Serve with additional feta crumbled on top and red pepper flakes to taste.
Notes
- This recipe is fairly versatile, feel free to add or substitute the veggies.
- When cooking the pasta you will want to fully cook as it tends to soak up the dressing.
- Adjust the dressing based on how wet or dry you like your salad. You may need to add a little extra when serving.
