Cheeseburger Salad

This cheeseburger salad is a great weeknight meal. This is originally taken from the Pioneer Woman and we have updated it slightly to include some of our modifications (which probably makes it a little less healthy).

Ingredients

Salad Base

  • 1 head Romaine Lettuce
  • 3 tbsp Ketchup
  • 3 tbsp Mayonnaise
  • 1 tbsp Relish

Hot Toppings

  • 1 lb Ground Beef
  • 12 oz (small pack) Mushrooms
  • 1/2 c Ketchup
  • 1/4 c BBQ Sauce
  • 2 tbsp Dijon Mustard
  • 1 tbsp Yellow Mustard

Cold Toppings

  • 10 Cherry Tomatoes
  • 2 Dill Pickle Spears
  • 2 tbsp Red Onion
  • 1 Avocado
  • 2/3 c Cheddar Cheese
  • Croutons (see note below)

Instructions

Salad Base

  • Chop Lettuce into small bite-size pieces
  • Mix ketchup, mayo and relish
  • Add sauce to lettuce to lightly coat

Hot Toppings

  • Brown ground beef and drain any excess fat
  • Add the ketchup, bbq sauce, and mustards to the cooked beef. Set aside.
  • Slice Mushrooms and cook over a medium heat until soft.

Cold Toppings

  • Cut cherry tomatoes in half
  • Chop the pickles and red onion
  • Cut the avocado into bit sized chunks
  • Layer all ingredients on top of the prepared lettuce / thousand island mixture. Start with the cheese, then meat and mushrooms, followed by the rest of toppings.

Notes

  • Homemade Croutons are easy to make and a nice addition to this recipe
  • Adjust the amount of toppings based on your liking
