This cheeseburger salad is a great weeknight meal. This is originally taken from the Pioneer Woman and we have updated it slightly to include some of our modifications (which probably makes it a little less healthy).
Cheeseburger Salad
Ingredients
Salad Base
- 1 head Romaine Lettuce
- 3 tbsp Ketchup
- 3 tbsp Mayonnaise
- 1 tbsp Relish
Hot Toppings
- 1 lb Ground Beef
- 12 oz (small pack) Mushrooms
- 1/2 c Ketchup
- 1/4 c BBQ Sauce
- 2 tbsp Dijon Mustard
- 1 tbsp Yellow Mustard
Cold Toppings
- 10 Cherry Tomatoes
- 2 Dill Pickle Spears
- 2 tbsp Red Onion
- 1 Avocado
- 2/3 c Cheddar Cheese
- Croutons (see note below)
Instructions
Salad Base
- Chop Lettuce into small bite-size pieces
- Mix ketchup, mayo and relish
- Add sauce to lettuce to lightly coat
Hot Toppings
- Brown ground beef and drain any excess fat
- Add the ketchup, bbq sauce, and mustards to the cooked beef. Set aside.
- Slice Mushrooms and cook over a medium heat until soft.
Cold Toppings
- Cut cherry tomatoes in half
- Chop the pickles and red onion
- Cut the avocado into bit sized chunks
- Layer all ingredients on top of the prepared lettuce / thousand island mixture. Start with the cheese, then meat and mushrooms, followed by the rest of toppings.
Notes
- Homemade Croutons are easy to make and a nice addition to this recipe
- Adjust the amount of toppings based on your liking
