This is a quick meal, great for weeknights that we found on Budget Bytes. We adjusted a few of the measurements and added the addition of cashews to give these dragon noodles that extra bite.
Dragon Noodles
Ingredients
- 8 oz Lo Mein Noodles one package
- 1 tbsp Butter
- 1 tbsp Extra Virgin Olive Oil
- ¼ tsp Crushed Red Pepper
- 2 Eggs
- 1 tbsp Brown Sugar
- 1 tbsp Soy Sauce
- 2 tbsp Ketchup
- 1 tbsp Hot Sauce
- ½ bunch Cilantro
- 1 Green Onion
- ¼ c Cashews
Instructions
- Slice green onions. Roughly chop both the cilantro and cashews. Set aside.
- Boil a pot of water and cook noodles for 5-7 minutes. Drain and set aside.
- Stir together brown sugar, soy sauce, ketchup and hot sauce. Set aside.
- In a large skillet melt butter with olive oil over medium heat. Add red pepper flakes and cook for a few seconds. Whisk eggs and add to butter. Stir and cook eggs until set.
- Add the noodles and sauce to the pan. Stir to combine. Mix in ½ to ¾ of the cilantro and cashews.
- Serve and garnish with remaining green onion, cilantro, and cashews.
